Ready to dig in? Let’s get started!

Step 1: Prepare the Chicken

Begin by patting your chicken thighs dry with paper towels. Trim off excess fat and remove any leftover skin. Cut each thigh in half, and then in half again, to get pieces roughly 2 inches in size. Remember, the chicken will shrink a bit while cooking.

Place the chicken pieces into a glass bowl. Drizzle with olive oil, add about a teaspoon of sea salt, and some freshly ground black pepper. Mix everything together until the chicken is evenly coated.

Step 2: Assemble the Skewers
Soak your skewers in water for about 30 minutes to prevent burning. Take each skewer and thread on the chicken pieces, folding them over as needed. Aim for 4-5 pieces per skewer. Repeat with the remaining chicken.

Step 3: Prep the Vegetables
Cut the top and bottom off a pepper, slice it open, and remove the ribs and seeds. Cut into 2-inch pieces. Peel and halve an onion, then cut it into cubes roughly the same size as the pepper. Thread one or two pieces of onion onto a skewer, followed by a slice of pepper. Repeat until the skewers are filled.

Step 4: Cook the Skewers
Preheat your air fryer to 400°F. Once heated, place the chicken skewers inside. You should be able to fit about four skewers at a time. Set the timer for 12 minutes and keep an eye on them to ensure they cook perfectly.

Step 5: Season the Vegetables
While the chicken cooks, drizzle the vegetable skewers with a bit of olive oil, sea salt, and freshly ground black pepper. Since the veggies cook faster, we’re just looking for a nice char on the outside while keeping a bit of that crunch.

Step 6: Make the Bang Bang Sauce and Serve
Prepare your Bang Bang sauce while the skewers are cooking. Once done, plate up your chicken and vegetable skewers, drizzle generously with that delicious sauce, and enjoy!
